I do like "Blue"; I would not say I was underwhelmed by it, but I hear where you are coming from; I do not understand why it so often gets cited as the best example of her work. Of that period, I prefer both Song to a Seagull and Ladies of the Canyon.
If I had to recommend just one Joni album for a newbie to check out, I would suggest Court and Spark. It's part of what I consider her most interesting period, but still pretty accessible
