There are 2 ways to go with this -purely instrumental stuff (which I know you are not mad about - but personally I really like his movie soundtrack material) or his solo vocal stuff. With regard to his vocal work my picks would be 'Get Lucky' or 'The Ragpicker's Dream'. I prefer the latter. Hope this helps. Check it out on YT. His collaboration with James Taylor on 'Sailing to Philadelphia' was fantastic too. But the rest of the album was not that great.

As far as Dire Straits is concerned I don't think they ever really made a bad album. I like quite a few tracks from each one of them. Quality material.

i only have his "ragpickers dream" solo set, that one has a folky, rootsy, blues feel to it, which really puts it in the bluegrass ballpark...
i should get a couple of his soundtrack albums i suppose...always loved the "local hero" movie and the main theme "goin home", i also have four selections from the "cal" soundtrack on b-sides of singles, like them also... like MH, im not really big on intsrumental music, but i have not heard one solitary Knopfler instrumental piece that i dont like(or love!)... as for Dire Straits... you know i like vinyl J-Man, but DS were made for cd IMO,vinyl aint in the same league for listening to 'love over gold','making movies' and 'brothers in arms' IMO... now also, i dont know anything about 'production' and the studio tech side of music, but to this pair of ears Dire Straits albums sound like sheer perfection to me, the whole balance of everything is just right, everything sounds like it is in its place for a reason.... i defy anyone to name a better song than "telegraph road", its a masterpiece from start to finish both musically and lyrically
