I would say "Trout Mask Replica", but I don't really like "China Pig"

Modest Mouse's "The Moon and Antarctica" is another brilliant I can listen to start to finish without skipping a single track

As far as essential Zappa albums, Apostrophe and Overnite Sensation are a must have. Some of Zappa best and most famous songs came from those, and they're very entertaining and funny. I'd throw Joe's Garage into that mix too.

If you're more into the Jazzier/Instrumental side of Zappa(the stuff he enjoyed making the most, and some of his most genius), Hot Rats and Shut Up and Play yer Guitar are ideal.
